Celery, Coriander and Chicken Soup

INGREDIENTS

Half bunch of celery ('cause you planted too much seed)
Half cup finely chopped coriander One cup cooked chicken
One chicken stock cube
Four turns of black pepper


METHOD

Chop celery and place in a pot with just enough water to cover the celery.
Bring to the boil then simmer until the celery is tender.
Put celery and water into blender and mix until smooth.
Return to stove and place on simmer.
Dissolve stock cube in one cup of water and add to mix.
Add cooked Chicken and black pepper now.
Cook until mix is back to simmer stage.
Add coriander last and stir through, remove from heat.
Let soup stand over night to intensify flavour or freeze to be used later.
Makes 2 generous serves or serves 4 as a starter soup.
