Sea Holly      |               Eryngium maritimum                     Umbelliferae

In Flower

Sea Holly is a real garden curiosity and a magnificent shape addition to any garden. Sea Holly is a short lived perennial (two to three years) with spiny leaves and strange metallic mauve flowers.

Very easy to germinate and grow on, it is at it's best in full sun.

Sea Holly leaves and young buds are quite edible and the roots, (dug in Autumn) make very tasty vegetables and can be sliced up and candied for sore throats.
